Avocado Honey Brownies

Avocados are a great source of nutrients including:
Folate, Magnesium, Potassium, Riboflavin (Vitamin B2), Niacin (Vitamin B3), Pantothenic Acid (Vitamin B5), Pyridoxine (Vitamin B6),Vitamin C

Ingredients

  • 1 ripe avocado
  • 1/3 cup of cacao powder
  • 2/3 cup of honey
  • 1/4 cup of oat, buckwheat, almond, or whole wheat flour
  • 1/4 cup of coconut or avocado oil
  • 2 medium sized eggs
  • 1 tsp. of baking soda
  • 1 tbsp. if vanilla

Optional:

  • Chocolate chips
  • Coconut flakes
  • Crushed walnuts, pecans, almonds
  • Peanut butter
  • Fresh or frozen berries

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. Blend all your ingredients (except chocolate chips, nuts, and toppings) in a food processor or mixer for a good 3-5 minutes until a liquid texture.
  3. Add the toppings on.
  4. Pour into a oven safe dish and bake for 35-40 minutes.
  5. Cool and enjoy!

Vegan Alternative Recipe

  • 1 ripe avocado
  • 1/3 cup of cacao powder
  • 2/3 cup of maple or agave syrup
  • 1/4 cup of oat, buckwheat, almond, or whole wheat flour
  • 1/4 cup of coconut or avocado oil
  • 2 ripe bananas
  • 1 tsp. of baking soda
  • 1 tbsp. if vanilla

Vegan Eggs:

Ripe bananas, apple sauce, flaxseed, and egg substituted powders and liquids seem to work well.
