Cake pops are delicious, and are cute treats to give out on holidays. Even though their popularity dropped over the past couple of years, they are still the most satisfying to decorate. Usually, Starbucks is known for their buttery yet sparkly cake pops, but are they “healthy”? Definitely not. By incorporating this recipe into our week, we will not only feel happier, but less guilty of our consumptions. This is also a great activity to do with your kids on a rainy day. You will only need 20 minutes make this, plus you don’t need to bake it.
Where to buy supplies:
When I first started making cake pops, I bought this cake pop kit and it gets the job done! Instead of rolling by hand, pop the mixture into the silicone trays and let them firm up in there. This pack also comes with sticks, but you can buy lollipop sticks separately here: Wilton 6 Inch Lollipop Sticks.

Ingredients
For cake:
- 8 Cooled Pancakes
- (1) Softened 8 oz. cream cheese package
- 1-2 tbsp. of maple syrup or agave syrup
For icing:
- 1/4 cup melted coconut oil
- 1 cup of nut butter
- 1 tsp. of vanilla
- 1 tbsp. of honey
Optional:
- Chocolate chips
- Coconut flakes
- Sprinkles
- Nuts
Instructions

- Shred the pancakes in a food processor or blender until it is crumbled.
- In a separate bowl, whip the the cream cheese, syrup, and vanilla until fluffy.
- Combine the crumbled pancake and whipped cream mix together until evenly stirred. You can add chocolate chips, sprinkles, or coconut flakes into the mix.
- Scoop the mix into balls, about 1 tbsp. and refrigerate for 45 minutes.
- Meanwhile, stir together the honey, nut butter, and the coconut oil until smooth. Then remove the cake pops from the refrigerator, and dip the lollipop in the icing dip, inserting the sticks into the cake pops.
- Freeze for 5-8 minutes or until the dip sets well.
- Dip each pop into the rest of the icing, sprinkling any toppings desired. Allow to set in the refrigerator for 10 minutes.
- Enjoy!
