Who knew that ice cream can give you a burst of energy, but also provide a calming relaxation. Maybe instead of making Chamomile tea late at night, treat yourself with this ice cream. Make sure you have an ice cream maker in hand. You can either use lavender infused honey, or honey and lavender buds for this recipe. Enjoy this calming twist.

- Yield: About 1 quart
Ingredients
- 2 cups of heavy cream
- 2 cups of whole or 2% milk
- 1 cup of honey (or lavender infused honey)
- 2 tbsp. of food grade lavender
Materials–
- Ice Cream Maker
Instructions
- Combine all the ingredients together in a sauce pan on medium heat until it steams. Stir every once in a while.
- Remove the pan from the heat only if there is no more trace of honey left in the mixture, and that all the ingredients evaporated into one creamy substance. If you would like, add purple food gel coloring into this mixture.
- Let it rest at room temperature for 15-20 minutes.
- Strain the substance using a mesh sieve to discard of any particles.
- Chill for about an hour in the refrigerator and then incorporate your preferred Ice Cream Maker’s manufacturing instructions, and freeze it accordingly.
- Once done, top with any leftover lavender or a drizzle of vanilla sauce.
- Enjoy!
A lot of people balk at lavender as a food, thinking they’re only a sleep aid or inspiration for impressionist paintings. This recipe proves them wrong! Thanks for posting!
