Lavender Infused Honey

When growing up, I remember slurping my grandfather’s beekeeping honey off my fingers. It was refreshing on a simmering summer’s day, but the taste always reminded me of a hint of lavender. Before this, I never experienced making any type of infused honey, but this combination of sweetness and calmness is pleasurable treat in your tea. It is very simple and you only need two natural ingredients: lavender and honey.


Ingredients

For 8 servings
  • 1 cup of honey
  • 2 tbsp. of dried lavender

Instructions

1- Pour the cup of honey into a saucepan on medium heat. Make sure the saucepan is heavy and secure for boiling.

2- Stir in the dry lavender and let it boil for about 5 minutes. Then you can remove the lavender out of the saucepan after it is infused.

3- Sift the honey through a mesh sieve until a heat-safe container.

4- Let it cool to room temperature for at least an hour.

5- Enjoy!


Tips

  • If you want the honey to be used for medicinal purposes, NEVER boil it. The heat will kill all of the antimicrobial properties that help with seasonal allergies.
  • Keep an eye on the honey when cooling, because it can turn to a jello-like substance if sitting too long.
  • Instead of waiting for lavender to dry (if that’s your method), you can use fresh lavender and dry it out by microwaving it between two paper towel sheets.
  • Add a couple tablespoons of water to the honey before heating it up so that it would not become hard.
